We tested eight thermal carafes with capacities from 4to 6ounces (roughly 5½ to 8½ cups), rating them on their heat and cold retention. A panel of testers evaluated how easy they were to fill and use. We also rated them on ease of cleaning. All models were purchased online and appear in order of preference.
Heat Retention: We filled each carafe with freshly brewed 161-degree coffee, sealed it tight, and then recorded the coffee’s temperature every hour. The best carafes kept the coffee above 150 degrees for at least hours—the longest we’d want to wait before brewing a fresh pot.
Cold Retention: After chilling the carafes with ice water for minutes, we filled each with 37-degree whole milk and checked the milk’s temperature every hour. A chilled stainless-steel pitcher served as a point of comparison. Although no carafe was able to keep milk below 40 degrees for hours (recommended by the USDA for food-safety reasons), we preferred carafes that kept milk closest to that temperature.
Lids and Pour Spouts: The best models had lids that attached easily and offered an audible or visual signal that they were on securely. Carafes lost points if they were slow to respond when we opened and closed their pour spouts.
Handles: We rated each model on the comfort and control of its handle. The best handles stayed cool to the touch. We also liked handles that were large and sturdy enough to comfortably support the weight of a full carafe.
Cleanup: Some models were easier to clean than others. Carafes lost points if their openings were less than inches in diameter, as they were especially difficult to clean. We preferred carafes with lids that could be disassembled or easily scrubbed for thorough cleaning.

Admittedly expensive, this handsome block certainly seemed to live up to its billing as “the last knife block you ever have to buy.” The heaviest model in our testing, this block was ultrastable, and its durable bamboo exterior was a breeze to clean. Well-placed medium-strength magnets made it easy to attach all our knives, and a rotating base gave us quick access to them. One tiny quibble: The blade of our 12-inch slicing knife stuck out a little.

This roomy block completely sheathed our entire winning knife set using just one of its two sides—and quite securely, thanks to long, medium-strength magnet bars. Heavy, with a grippy base, this block was very stable. An acrylic guard made this model extra-safe but also made it a little trickier to insert knives and to clean; the wood block itself showed some minor cosmetic scratching during use.

How we tested
Discouragingly, only three vessels held the soup above 140 degrees for the duration of testing, and no jar kept the macaroni and cheese or tuna salad food-safe for even hours, since the windows between their starting and food-safe temperatures were narrower. Some jars also lost points for durability, spilling when we shook them for 30 seconds and denting when we dropped them while they were in a backpack. Odors clung to the model with an internal plastic container.
If hot soup is all you transport, there was one model that will get the job done. It also cleans up in the dishwasher. But don’t expect any model to maintain food-safe temperatures for very long if its contents don’t start out very hot or very cold.
Notes for tea and pour-over brewing
If you want a built-in loose-leaf-infuser option: Contigo, Thermos, Stanley and Zojirushi all sell tea-steeping versions of the mugs we tested here (or snap-in accessories) that might help you out, but we’ve been happy with the convenience of drop-in or basket infusers.
Both loose-leaf tea drinkers and pour-over coffee geeks should note mouth-width before they buy: we found the necks of the Klean Kanteen, Thermos Direct Drink and Zojirushi SA4were too small to take any but the narrowest tea infusers; the Hario V60 pour-over coffee brewer just fits the mouth of the Thermos.
The Mesa does keep your drink hot three times longer than a conventional open-top single-wall ceramic mug (an hour above 140 °F instead of 1minutes), but the sliding closure on the lid did not prevent spills.
While some manufacturers of the stainless steel mugs say you can put them in the dishwasher, the microwave is territory held securely by mugs like the Mesa: we microwaved water to a piping-hot 18°F and were happy to find that the outside of the mug was only a pleasantly-warm 9°F, unlike some ceramic mugs that get insanely hot on the outside when nuked.
So, if you are simply looking for slightly better insulation in a ceramic tumbler that can go in the microwave and the dishwasher, the Mesa is worth considering; if you want to stop spills and keep your drink hot for a long commute, read on.
Another important duty of a travel mug is stopping spills. Some of our testers have worked in locations where only spill-proof mugs are allowed, and far too many of us have experienced the tragic consequences of using unworthy mugs in moving vehicles or at desks covered with important documents.

We ran two tests to measure how well these mugs retain heat. The first test gives a broad overview of mug performance when starting with water at typical restaurant serving temperature; the second test shows how our favourite mugs performed when starting with a lower temperature.

In the first test we poured very hot water (it was a lot of pouring, so starting temperature varied, but we’ve normalized the differences to show loss from a 18°F starting temperature) into all the mugs and checked the temperature after an hour. Results are in the main table above.
